Best used in a pepper grinder or mill, where you can have the whole peppercorns freshly ground to release a fresh but spicy kick.
Traditionally a quantity of pepper is coarsely ground in a spice grinder (or coffee bean grinder) and then mixed with fresh lime juice. Generally a few tea spoons of coarsely ground black pepper to one lime and salt to taste, to the consistency of a paste. Dip with thin strips of beef straight off a coal barbecue…just mouth watering.
